Acipenser gueldenstaedtii, named in honour of the 18th century German-Russian biologist and naturalist Johann Anton Güldenstädt. Güldenstädt was known for his contributions to the field of natural history and exploration.

Acipenser gueldenstaedtii, commonly known as the Russian sturgeon, is native to the waters of the Black Sea, the Sea of Azov, and the Caspian Sea. Despite its name, it is not limited to Russia, being found in several countries bordering the Caspian and Black Seas, including Iran and Ukraine. 

The pearls of Acipenser gueldenstaedtii are medium-large in size. The caviar has a smooth and creamy texture and is firm but not overly so. The pearls have a slight resistance and pleasant pop when gently pressed between the tongue and the roof of the mouth. 


The roe from Acipenser gueldenstaedtii is known for its complex flavour profile; having at once a pronounced nutty-earthy taste, with subtle notes of hazelnuts and toasted grains; but also a discernible buttery quality, which contributes to its richness, along with a subtle brininess that all come together in a symphony of savoury character, with a clean and pleasant aftertaste that lingers.
