Created through a specialised ageing process, Friend & Burrell exclusively distribute black garlic grown and aged in Hayward, California by Black Garlic Inc.
Black garlic is created by ageing raw garlic for a month in a fermenting cellar under high heat using a patented process.
This process blackens the garlic and produces a chewy texture. It has a slightly sweet flavour, with hints of licorice, porcini mushroom and aged balsamic vinegar.
Black garlic’s versatility is also part of its appeal. It’s simply delicious sliced thinly over salads, seafood, roasted chicken or cold cuts of meat. But the potential and use of this wonder ingredient is only limited to your imagination.
Introduced to Australia in 2009, Black Garlic is now a staple on the menus of hatted restaurants such as Movida, Cutler & Co. and Rockpool. In the UK, Yotam Ottolenghi popularized it with his famous “Aubergine with Black Garlic” dish.
