Since 1856, the Trikalinos Family has produced bottarga, a nourishing delicacy of cured grey mullet roe enjoyed since the times of Ancient Greece and Egypt. Trikalinos bottarga meets Friend & Burrell’s high standards of excellence in flavour as well as production methods. The roe is carefully selected, and extracted by hand, then packed manually in a controlled environment. This is a meticulous artisanal, traditional process. Preservation utilises the sea breeze, drying under the Mediterranean sun and sealing in natural beeswax, employing methods passed over four generations of the Trikalinos family. The Trikalinos’ quality assurance processes and modern facilities and techniques ensure that the beautifully fresh bottarga is produced and preserved in pristine conditions.
A few years ago, chef Ferran Adria included Trikalinos bottarga in his top 30 World’s Best Products Selection.
